This gazpacho requires juicy sweet tomatoes. Choose the most fragrant in vegetable shops, you can choose different varieties. Just a handful of dried strawberries will give the soup the right accent.
An obligatory ingredient is sun-dried tomatoes, which make the consistency of gazpacho creamier and the taste richer. If you take sun-dried tomatoes without oil (just dried), then add another spoonful of olive oil to the soup.
Ingredients for 3 servings: 3 large sweet tomatoes, 1 small sweet red pepper, a handful of sun-dried strawberries, 1 medium cucumber (without skin), 1/3 cup sun-dried tomatoes, juice of 1/2 lemon, 2 cloves of garlic, 1/2 teaspoon red pepper, a pinch of cayenne pepper (chili), 1/2 teaspoon salt, basil leaves for garnish and flavor.
Cooking method. Wash and chop the vegetables. Cut off the peel from the cucumber. Put all the ingredients in the blender, not forgetting the sun-dried tomatoes, the juice of half a lemon and spices. Blend everything in a blender until smooth. Pour the gazpacho into plates, garnished with a basil leaf.
The soup is delicious to eat with half an avocado, dried bread made from sprouted wheat or fresh goat or sheep's milk cheese.
